Why would't you use real saurkraut (sauteed and lightly browned) intead of just cabbage? Russian dressing is preffered to thousand Island if you can find it. I expect it's not hard to make. Duck looks fantastic, perfectly cooked and great recipe idea.
That's in no way a Reuben! No sauerkraut or thousand island… you really can't call this a Reuben just cause you used rye bread and Swiss cheese!!

Curse me for my pedantry, but coleslaw makes it a Rachel rather than a Reuben. Although, that doesn't stop me from wanting it any less.
