Great recipe but then again all Gordon's recipes are phenomenal. I do though prefer the profiteroles without the milk and also I do not bake them on parchment and neither do I need to dampen the tops. I use a different method where I flick water on my cookie sheets, draining off the excess and I pipe directly onto this and bake normally.
