Popeyes chicken tenders made me think of corn flakes or crackers. I’ve always used peanut oil. Is there any reason canola oil is better ?

I am not a super big fan of egg wash for some foods like chicken. I worked at a seafood restaurant for the summer a few years ago and got some good recipes. Their main dredge was flour, evaporated milk, and cracker crumb. I defy you to find a better coating for seafood for maximum crunch and adhesion. Anyway, I like buttermilk for the marinade, but try evaporated milk for the wash and you won't have the problem of crust separating from the protein no matter what you fry.

Ranch? No. Pickle "Juice?" Yes. Pound them flattish and let soak overnight or all day at least. Always double dip… Alabama recipe.
Why are you speaking high and low n every sentence?
Corn flakes are sweet. What I believe Popeyes uses are plain bran flakes. It’s what I use for my fried chicken.
I marinate my chicken parts for 2 days in …whole milk, plain Greek yogurt, and my spices. Then, I rinse it off, and pat it dry.
Then I roll my chicken in Mayo, then I roll them in bran flakes, and then I bake them at 375 for about an hour or so. Depends on how much chicken your baking.

I thought MSG is unsafe?
It is best, prior to marinating, to slightly butterfly the thick part of a large chicken breast and then to lightly pound it.

…i would have cut each chicken breast in half and then pounded them more even + flat… that would solve the meat/breading ratio…and you can make four sandwiches instead of two…

Not gonna give you a thumbs down but MSG is an issue with me. Thank you for pointing out that some valleys put it in their dresses. Won't buy their clothes anymore. kinda surprised you went all out that way, but I still love watching and getting ideas. you got a lot of good stuff. TY

Pickle brine the chicken for Chicfila taste. Peanut oil is the key for Popeye's texture.

This turned out excellent! ❤️ BUT I have two Qs:
1 Why is your filet so RED? I put a good chug of Cholula in, but I'd have to load it with annatto powder to turn it anywhere near that red!
2 In this video you suggest that you've eaten many Popeye's chicken sandwiches, and then compare the end result with Chick-Fil-A. But in the linked blog you say you've never been to Popeye's and only had Chick-fil-A once. So which is it, John? 🥴 Witness:
