    Holy SnapBalls! This recipe is R tard ED! Had it with honey-roasted brussel sprouts and bbq marinated grilled chicken. It's truly a magnificent potato recipe. For dessert had his thumbprint cookies with blueberry jam. Also we had the potato latke recipe yesterday and our heads nearly exploded. thank you Chef John!

    If it's supposed to mimic the tase and texture of baked potatoes with sour cream, why not just bake some potatoes and serve them with sour cream and white cheddar? That's a lot of work for such modest results.

    DO NOT USE A TEASPOON OF SALT PER POTATO!!!
    Too too much. For three large potatoes ( three cups of potato) two is perfect.
    Basically this is twice baked potatoes with the skin mixed in instead of being the bowl.

    I did this for Christmas, added bacon and chives. It was very very good But….. if your white cheddar is already salty, as many are.. reduce salt by one tsp.

    I love to put those 3 potatoes into the microwave for 14 minutes, than wrap them in aluminium foil and leave them until needed because they will stay warm.
