    Hi Chef! They were not invented in San Antonio. They are called Salbutes and are from Yucatan, Mexico (19th Century). They are usually topped with Cochinita pibil, Although your Chipotle chicken (Tinga) does work really well on them.

    @ 6:33 Sorry Chef John but I've been to San Antonio. The only two things I remember are Air Force basic training @ Lackland AFB and living for 6 weeks on nothing but pecan pie and water. Had some serious time constraints back then. Oh well. Pecan pie is still one of my favorite friends.
