If you add a bunch of peppers to that or carrots and potatoes you can make any curry you like. Try plain yogurt if you can't get coconut milk. British by appropriation and by being the blandest of curry. But Yummy!
Actually Chef John, I believe it’s traditionally from Scotland, not England! But it’s very much a National dish all over the UK.
For anyone interested, this is how I make this dish.
Onion, garlic, fresh coriander, fresh chillies, ginger, garam masala, cumin, salt, chili powder and turmeric and a can of chopped tomatoes and tomato purée cooked in the pan and then it all goes into the blender which makes it more smooth. Then you take this spiced blended chicken and add it into the sauce, add some brown sugar and then you add the coconut milk and let it cook for a while. I find this is much more smoother and more like what you will find in a lot of indian restaurants in the UK.
So what’s the deal, chef, do you just brown the thighs, or cook them through before you take them off heat?
Lived in London for a few years yep this is England's national dish. I now live in Boston. Not easy to get Indian out side of Cambridge MA. With a lot a lot of trail and a lot error I finally nailed this dish thanks to you. I used traditional Indian spices but thanks to you chef John I cracked it.
chicken is not marinated and heated up in a pan, do it in an oven! NEVER head up Ghee to high! Use frehs ingredience, tomatos, more garlic and caraway seed, slice the onions fine and small for browning, use chili, butter and cream. That makes your Tikka lesser boring like in the video…

I make this constantly. I've tweaked it by adding a Serrano chili split in half for the simmer. I also add sauteed mushrooms to the mix and a squeeze of lemon at the end. Excellent!!

I know this is years after you've posted this recipe but I have to let you know. I've made this dish for years and it's hands down the most amazing dish I have made. Like it's hard to even convey how good this dish is. My wife and I both agree this dish with heavy cream is the best thing we've ever eaten. Thanks for this recipe. We love you Chef John.
