Honestly I don't like the design of this and I don't know if he actually did get the puff pastry from the store but that part did look good. My problem is the height of the millefeuille and the raspberries, yeah fresh berries gives it a better look from the aspects of being bright and fresh but if he made a raspberry cream it would lower the height, making it more manageable but also create a waltz of flavor when eaten with the orange cream. Then to end you can garnish with edible flower petals or raspberries and orange slices.
Sorry to say but that's the most dilapidated Mille Fuille I've ever seen from a famous chef.. No hard feelings tho.. still love Gordon🤗
It's Great but at 3:00 wouldn't it be a good idea to add a few dabs of the cream onto the Raspberries just to ensure that 2nd pastry layer sticks down better?
Otherwise, half the whole thing is basically loosely sitting on top of the fruit
A rare miss by Gordon in this one, for Millefeuille you don't want the pastry to puff up like that, it should be thin and flat to give more rigidity, only the top layer should be soft and puffed. It looks like a mess that is about to collapse at the end there.
