  • Monroville on December 27, 2017

0:30 Hmm.. I wonder how it would taste if someone cut the flour in half and replaced the other half with crushed graham crackers. And would it be feasible to take the remainder crust and form a lattice on the top?

BTW, how much flour are you using (1 cup or 2)?

  • Frank Bags on December 30, 2017

  • Paul Collegio on August 6, 2019

So many eggs! It looks as if it came out quiche-ish. And dont even get me started on your pronunciation of "ricotta". Once you neglect to properly roll the r, there is simply no possible redemption…;)

Ricotta pie is so amazing. This version looks good. And making it ourselves is a great idea.
Now I have had it since I was a kid from Guarinos in Norwood Massachusetts. And recommended anyone in that area to try it

So my friend, are you the same Chef John that hosted an extremely amazing eatery in Cary, NC in the 1990s? The crab cakes were the adverized best thing on the menu but I always came for the muscles. Only ever got there around a couple times a year but you (or your doppelganger) always greeted me at the door with a glass of Pino Noir.

listen. The thing about ricotta pie is the more simple it is, the better. And always use a graham cracker crust, trust me

  • Nico Constantino on May 30, 2020

Oh and Canolis traditionally use vinegar, not wine, but I like the idea 😁

  • Nico Constantino on May 30, 2020

Also, chef John. When you make the pies, try whipping the egg whites and then folding in to the final ricotta mixture, it’ll makes it a lot creamier and fluffier
