So my friend, are you the same Chef John that hosted an extremely amazing eatery in Cary, NC in the 1990s? The crab cakes were the adverized best thing on the menu but I always came for the muscles. Only ever got there around a couple times a year but you (or your doppelganger) always greeted me at the door with a glass of Pino Noir.

listen. The thing about ricotta pie is the more simple it is, the better. And always use a graham cracker crust, trust me
Oh and Canolis traditionally use vinegar, not wine, but I like the idea 😁
Also, chef John. When you make the pies, try whipping the egg whites and then folding in to the final ricotta mixture, it’ll makes it a lot creamier and fluffier
