Roasted Roman-Style Romanesco – Food Wishes ctm magazine

Romanesco looks like something brought to earth by aliens, which is fitting, since the taste is out of this world. And because of this UFO’s (unidentified flavorful object’s) bizarre appearance, many shoppers are hesitant to add it to their cart, which hopefully won’t be the case after watching just how easy it is to prepare this mysterious vegetable.

Chef John- I raise ducks and bring them to duck farms when they're old enough. I couldn't find romanesco anywhere, but today I donated four ducks to a farm and low and behold, I saw romanesco in their market! I bought 2, all they had. Cant wait to make it!

Chef John: Did you know that the printable recipe says 14 cups of bread crumbs?

  • Todd Ellner on September 19, 2020

The written directions are WRONG WRONG WRONG!!!
I quote "14 cups plain dry bread crumbs".
There had better be a missing slash there.

  • Keith Wilson on September 19, 2020

You should name this recipe, “To serve man.”

Before he explained that Romanesco is an actual vegetable, it so much looked like broccoli whose recipe was getting a fancy-pants name.

  • bubblegumplastic on September 21, 2020

I made this, and it turned out strange. Overly bitter and sour.

I followed the recipe carefully, could you tell me what might have gone wrong?

  • Ben Taylor on September 22, 2020

Delicious recipe Chef John 🙂 I think a lot of people don't realise how good veggie dishes can be with the right dressing, the anchovies, olive oil and parmigiano really adds so much to the flavour. I love romanesco it's my favourite vegetable. It's also amazing in soups 🍲

  • Black Hole on September 26, 2020

Just add fat: vegetables hate this one trick!

  • Nina Cast on September 26, 2020

  • Will Jennings on September 29, 2020

You could riff on this recipe to do something like a broccoli-cheddar soup as casserole with Romanesco in Bechamel with bacon on top.

    Hey chef John,

I'd really like to try this out, but I am a vegetarian. What would be a good substitute for the anchovies? Some sort of salty paste like tamarin or even soy sauce?

Thank you in advance for an answer! Greetings from Germany 🙂

I've never seen or heard of broccoli romanesco. Walked into Whole Foods the other day and was like, "What is that?!" I'll tell you what it was. It was delicious. Especially with that recipe. I couldn't believe I'd made it. Thank you!!!

  • John Sheehan on January 18, 2021

Great vegetable although I don't think I've ever had bitter Broccoli before. Broccoli rabe is bitter don't like broccoli rabe.

  • eggypickle on January 21, 2021

It's delicious, just like roasted 'normal' broccoli is.

I can't believe it took me until adulthood to have roasted broccoli, it's the best way of cooking it. Nutty and sweet, I'll never steam broccoli (or romanesco) ever again.

  • Mike Jumps on February 23, 2021

that broccoli is absolutely soaked, dripping with olive oil

  • Dadalux on March 7, 2021

Since it is a close relative to both cauliflower and broccoli, why don't we call it Cauli-coli for simplicity? It is easy to remember as well.

  • Mike, TheAnimated on September 11, 2021

I found out about this while (attempting to) learn about fractals, which naturally lead me to ask "how are you supposed to eat this?" And here comes Chef John with the save.

  • HydromaniacCat on September 16, 2021

I hope mine turns out well. It's currently in the oven. I coated it with chipotle ranch, cayenne, salt and a bit of olive oil
