So I bought a couple of sea bream fish but the stupid fish monger took of the scales and the fins by accident… anyone has an idea how to prwvent the fish from becoming too salty? I read somewhere that you can wrap the fish with baking paper before you cover it with salt.
Any ideas?

Buying salt for 10kg only cost about 6 usd where i live lol, just buy it from supplier itself, not from supermarket, that’s how you get cheaper ingredients

a Chef that didn't 'mess up' salt encrusted fish? how many takes was that? takes longer to prepare than go fishing, get home, prepare, cook, eat the fish and wash up? and takes ten years worth of salt? insane. I came back for the Leek recipe, it's the only one on youtube that still looks vaguely like leeks and might be potentially edible.
I remain a loving fan of both Gordon Ramsey and Marco pierre white. Each a wounderful expression of their own artistic genius. Both pioneers in the culinary world with established deserving legacies.They have my utmost respect.
Heaven help me if Gordon ever set foot in my kitchen. He'd probbaly have me arrested for crimes against food. It's good enough for me, but I'm sure Gordon would riot if he saw me bumble around.
