    Looks great chef. I guess I will use thighs instead of breasts (like your chicken, sausage, and pepper recipe). Also, I think I prefer the potatoes/starch au côté – not on top of the meat.

    I think chef cleans his stove top between takes. I sauté chicken breast and I’ve got oil dripping off of the cabinets, oil on my glasses and oil all over the top of my crocs.

    persnally, I would do what many italian-americans do and remove the raw sausage from the casing, and break up with a spatula while browning. This would not only save the trouble of slicing the cooled sausage, but also render more pork fat and fond to pan sauce with. Some times I do like the snap of an intact sausage casing however, so there's a couple different ways to go.

    At the 4:30 min mark, you stated you cook your chicken to an internal temp of 145 degrees…isn’t that for pork? I thought chicken went to 165?
