    I think I might try this, but will fry the sausage patties before stuffing them in the pancakes, because I like a little char on my sausage.

    I like to parboil the potatoes first, just 5 minutes. The taters become drier, stickier, and there's less risk that it'll undercook. I forgot where exactly I got this technique, but it might have been from Wolfgang Puck's rösti recipe
