I always wanted to have sea bass and i got some today because I say this recipe. Just like Youchutup said, it took about 35 minutes before before the fish was flaky. The fish was flavorful, but I didn't enjoy it. Don't know if i cut the fish too thick or if it was the fish, but the fish was extremely fatty. I have been repeating Chef John's ideas for a few years, this and cold stove popover recipe didn't make the cut. Please know I will keep cooking his ideas.
After sleeping on it, I can't blame the recipe, it worked as it was supposed to work. My wife loved the potatoes. I never tried sea bass, I wasn't familiar with it. I will try it again with a more familiar thick fish.

Sea bass recovers from being frozen very well. It bakes very fluffy.
We don't have seabass in here. Or, at least easily available. Can you use other kind white meat fish for this recipe? Like zander (pikepearch)? Or perch?
Had some Chilean seabass in the fridge, so I had to look for what Chef John would do with it. It's my lucky day, because this recipe is a definite winner. He's not exaggerating about the vinaigrette on the fish and potatoes…spectacular flavor. This will become a go-to dish. Thanks so much, Chef John!

Chef John you are the most incredible chef. You never cease to amaze me with your easy simple recipes. Let me tell you this is one of the most delicious dishes I’ve ever eaten. This is restaurant quality dish one you would pay over $30 per person for but I made this for pennies. The only item that cost a little was the sea bass everything else was in my pantry already. The color and taste of this soooo easy dish was company worthy. I’d serve this any day to company. I ate the entire dish of 2 pieces of fish with everything else and couldn’t get over how amazing this dish was. Inexpensive, quick and beautiful.
