I always like to keep a few cans of red salmon in the pantry for those dreaded “there’s nothing in the house to eat” situations, although they generally end up being used to make salmon cakes. This time, however, we’re using this greatly underrated, and underappreciated protein source in loaf form

    Since canned salmon is pretty high in sodium, I'll substitute panko for the saltines and skip the dash of salt.

    Mom used to make this when we were growing up. Her recipe has chopped parsley in the loaf mix for color and she served it with 'egg sauce' – a well-seasoned bechamel with sliced hard boiled eggs folded in. Delicious – and not ugly!

    I feel like this dish is challenging me to find a way to plate it in an attractive fashion. Maybe cut into cubes, some crispy kale on top, a schmeer of that remoulade, some taro or yam chips on the side, a few other fresh dark greens… Eh, I'll think of something.

    Jack Mackerel is a cheaper alternative to Salmon and very similar in taste and texture. Also, why would you stop referencing "shave cream"? I have used it for about 60 years. How do the Gen whatevers get the whiskers off their faces? (Or those few who bother to do so; and why do they wear knit ski caps year round? Spend a summer in the South, and that thing will be long gone)

    I love canned salmon but I do remove most of those bones. While they do indeed "disappear" if you smash them up well, I find it to be a gritty texture in the final product, but that's just me.

    I tried this and I wasn't a huge fan of it fresh from the oven. The next day I took my leftovers and got it golden brown in a toaster oven and dipped it in sweet chili sauce. Much much better!

    Decays ago my Mom was hospitalized. During her stay, she was served salmon loaf with a fine white sauce. When she came home she found a recipe and served it to us. Never having had salmon before we all loved it. All 11of us. Mom served it with mashed potatoes and veggies. A great meal to enjoy!! Thanks for your recipe and reminding I need to make it soon!!

    Do not eat salmon skin or spine, or the dark brown/blackish part that runs down the side of the salmon. These areas have the most fat… and no, I'm not afraid of a little fat, if that was all it contained. Salmon are predatory fish, who, because of their diet (and the pollution in the waterways) they consume copious amounts of mercury. Mercury gets washed into our waterways from coal-burning power plants, and… is a product used in the gold mining industry (pay attention CA and Alaska) And… also comes from the fur and fabric dying industries. Little fish eat their microscopic food laced with miroscopic mercury off the bottom; bigger fish eat the smaller ones, etc… and the predatory fish, such as Salmon, tuna, bass, trout, and even shark, end up containing concentrated amounts. Odd thing, they store the mercury in their fat cells, unlike humans where it goes into our nervous system, delaminating the schwan cells that insulate dendrites, causing humans to become 'mad as a hatter'…and other nervous system problems too. So… to sum up… Just don't eat the skin and fat of predatory fish, and you'll be fine. Oh, and do NOT feed the skin etc… to your dog or cat either.

    The best sauce for salmon filets, patties, cakes: I make a little white rue add creme fraiche or yogurt, garlic, lemon juice, zest, parsley or cilantro, chili flakes, S&P, and parmesan …don't forget some briny capers! Thanks Chef!!!! Always such a pleasure
