Made the schoolboy error of burning the stock when prepping for this so had to reach for the boullion; turned out pretty well despite this. Low and slow is the way to go!

Made these last night. I altered it by adding a finely diced onion, which melted into the braising liquid and a few sprigs of thyme. Came out fantastic. Will be making it again in a few days.

WHEN you say 170-180 degrees for 2.5 hours maybe you should tell your viewers that you mean CENTIGRADE. Because there’s a big difference between 180 degrees and 350 degrees. At least clarify it in the description.

My father, also a professional chef, did tell me that you shouldn't cook food w a bottle of wine you would not also want to drink.
I do not have that refined of a palate (maybe that's your point) ~ but I did always follow his advice and use a fairly nice drinking wine for any cooking.
