I'm watching this while sitting on the deck at the lake… I just caught a whiff of a dead fish on the rocks. It was kinda surreal — like bad smell-o-vision.

  • DevInvest on August 23, 2018

    Love this!
    Thank you Chef!

  • Joe Ahearn on September 5, 2018

The first time I heard the word Schmear was when ordering a bagel with cream cheese in a New York deli. The other option was a schlab of cream cheese. And of course smoked salmon a.k.a. Lox. This “schmear”is a great looking alternate.

    This is a great recipe.
    Thanks!

    "$18/lb for air" 😂

  • Terri Light on January 27, 2019

The recipe was incredible, but the addition of radish-bikinis on the plate was sublime.

  • Dude on a computer on February 17, 2019

You caused anticipation, with your forkulation.

  • Steve Logan on March 1, 2019

I think the word schmear is jewish, and they know their fish, schmear, schmaltz, schlameel, schlamazle, they got it and it is kosher and healthy

  • Joe Ahearn on March 30, 2019

A schmear of cream cheese spread on a pumpernickel bagel – ah, memories of commuting to NYC and Zarro's Bakery in Grand Central Terminal, where you could get a schmear or a schlab of cream cheese… a schlab you cut off the block of cheese. But I always enjoyed a good schmear. Now I need to find a decent bagel – not easy in rural upstate New York….

If you're paying by the pound then it doesn't matter how much air is whipped into it….

  • April Spencer on April 16, 2019

Bring that smoked trout schmear to me hear. 😋

  • Faiz Khalifa on April 21, 2019

    Shmuck

  • K Jones on June 11, 2019

To make it more airy… What would you do?

  • John Murray on June 17, 2019

Wild trout tends to orange, while hatchery trout is often not.

  • jexteberia on July 6, 2019

Is there a vídeo for smoking trout?

  • Bob Carroll on July 22, 2019

I thought forkulation was a sin.

  • Kyle Aldrich on July 30, 2019

How can you pay $18/lb for air? Air is weightless.

  • Nothing on September 25, 2019

Ok so 2015 is where you start sounding really weird. No one talks like this. It's completely obvious to everyone that you're faking it because you have countless hours of content where you don't talk this way. Why do you do this? Do you think it makes people watch more of your videos? I just don't understand it. It's SO odd. It's distracting. It makes me enjoy your videos less than I would if you just talked normally. Sorry for being hung up on this, but as someone who is new to your content it's just SO off putting when you talk like a maniac 🙁

  • OhSankYouDoktor on October 5, 2019

The Public Theater recently started selling bagels. Their daily special is a Papp Schmear.

  • Fletcher Kirwan on November 29, 2019

Hey, 4 years late to the party! I adjusted ingredients a bit (sub crushed garlic for dill, sub cayenne for smoked ancho) and did a shredded pheasant schmear with this as a base! We went through over a pound of it before Thanksgiving!

  • Matthias Wiegand on December 27, 2019

Interesting that you chose a fish knife to apply the smear.

    BEAUTIFUL 😘

  • Arthas Menethil on January 13, 2020

I was going to go fishing this summer and I think I'm gonna have to go for some rainbow trout and fire up the smoker…

  • Andrew Van Wagoner on January 18, 2020

Made this last week – if you’re even considering it DO IT. Definitely near the top of the Chef John recipes I’ve tried so far!

  • Maureen Whiteschock on January 22, 2020

    “forkulate”😂

  • Paul Wagner on February 11, 2020

I wonder how smoked chub or salmon would do? Probably really good.

  • Mark Vincent on February 21, 2020

I put that lettuce root ball in the dirt and get a few more heads back from the efforts.

  • Alexander Norman on April 4, 2020

The best tasting schmear is a pap-schmear.

  • riproar11 on May 17, 2020

The word "schmear" should never be anywhere near food just like you would use caution to avoid contaminating anything where meat has been prepared.

  • Gus Polinski on May 25, 2020
  • djshaqtheripper1 on June 26, 2020

Nice presentation but the way u talk is annoying

  • Wynnye Key on July 8, 2020

Too bad, no printable recipe. Not even on Allrecipes.

  • Gail Jones on July 9, 2020

My Yugoslavian step dad called our salmon dip schmear. Ever since it is schmear.

When Brooklyn got a minor league baseball team, there was some discussion over what would be an appropriate name for the team. The Mets choose to name it after the roller coaster ride, the Cyclone. My entry was/would have been "The Brooklyn Schmear." I imagined a logo with maybe a cartoon baseball character riding a wave, only a wave of cream cheese, somehow.

  • Brain Phelps on October 3, 2020

smoked fish goes great with dill because the smoked fish is rich and salty and the dill is pungent and zesty. just an FYI

  • Brain Phelps on October 3, 2020

18 dollars a pound for air? But air doesn't weigh anything. they value this stuff by the pound, not by volume

  • Ramon Estevez on October 21, 2020

I love watching your vids but even if they whip more air than needed into it, if it's sold by weight you're not getting grifted. Now if it's by volume, yeah you'd be paying more for air.

  • Don Hancock on October 24, 2020

You are the Bill lambeer of your smoked trout schmear.

  • MisfitsFiendClub on November 4, 2020

Feeling super lazy? Costco has smoked whitefish salad, two pound container for $12. Flavor is so addictive it's not even funny.
Great with avocado on a salad or good quality deli rolls. I'm sure Chef John's is way better, but it's good to have options

  • Pink Llama on November 26, 2020

Making this for my T-Day appetizer with some bagel crostini.

  • Tom F on February 21, 2021

Paying 18 per pound for air 🤔

  • Janetkelly Kelly on February 23, 2021

    Thankyou it's so easy

  • nlbhaduri on March 13, 2021

    Forkulate …..

  • Judy Vallas on October 2, 2021

You are a blessing – my son canned some freshly caught smoked trout (& a jar of smoked salmon) for me, and I’ve been in a quandary for what I want to do with it, so it’s sat for too long unused. This is so perfect & kind of assures it’ll actually be eaten. Thanks!

  • DeliaLee8 on October 8, 2021

    "forkulate" – lol!

  • victoria milonas on October 29, 2021

If you ever saw HGTV's Fixer Upper, you would hear schmear in another context. When bricks aren't pretty, it's a German practice to put a light, irregular coat of plaster on them.

  • outNtheshawnee on December 28, 2021

I bet this is amazing. Cannot believe I’ve never had this before being from the north where smoked trout is big. Not have I seen this video. I will be making this. Thank you.
