Spaghetti with Chilli, Sardines & Oregano | Gordon Ramsay ctm magazine

Here is a way to spice up a typical pasta dish. Gordon prepares toasted breadcrumbs, finely diced chilli, oregano and garlic, and combines it perfectly with tinned sardines to make a super healthy meal packed with protein. Sardines are an incredibly versatile and nutritious ingredient that adds a real unique flavour to this easy-to-prepare dish.

    My family always had sardines on hand when I was a kid. We give them to the dog in her food to keep her coat shiny and cut down on the shedding. But I have to say I'm definitely trying this recipe on the weekend as it looks great

    This did NOT turn out the first time. First thing, you need to find really high quality Boneless Sardines in OIL, not water. Second, the amount of olive oil you are using and the exact timing and heat are very important here. Also, start by finely chopping 1/3 of chili, because its VERY potent and just destroy the dish. Make sure you actually fry it nicely before adding the pasta too. Hope this helps, happy cooking!

    The dish turned out great first when I made. I used half a box of pasta with ten sardines. Second time I forgot to use half a box of pasta. I made one box. Not so good. I had to use mozzarella cheese with pepper to cover the extra amount of pasta.
