    Made this tonight and It was freaking delicious. I substituted tamari for soy sauce and it was a little salty but still amazing will definitely tweak the salt content next time.

    Chef John, like your Peanut Butter Curry Chicken, this is an outstanding dish. Thought I'd pass a long a couple of variations I make in this recipe. First, I buy bone in thighs; cheaper price and since I have a very good fillet knife, de-boning might take a little longer but there are benefits. A bone-in thigh has skin which I remove and reduce the fat instead of the vegetable oil and I do caramelize the bones to get out as much flavor as possible after which the bones are removed form the cartelized chicken. There's more than enough fat from the reduction to caramelize the chicken, Both dishes have turned out nothing less than superb with rave reviews from my family and friends. These are great recipes and I thank you for sharing them with us.
