ผมคิดว่าที่ต่างประเทศคงจะหา "ข่า" (Galangal) ไม่ได้ จึงต้องใช้ "ขิง" มาแทน แต่คุณรู้อะไรไหมกลิ่นของขิงกับข่า มันคนละแตกต่างกันเลยนะ และในอาหารไทยเราไม่ใส่น้ำมันมะกอกลงในน้ำพริกหรอก ที่ไทยเราจะไม่ทำแบบนี้

Use galangal for Thai green curry paste. Nobody should use ginger for green curry paste.
