    I'm not saying frozen fish is bad, but you're off your nut to claim that fresh fish isn't more desirable. Fresh is always more desirable whether it be protein or produce, especially in the case of seafood and even more so in raw preparations.

    Chef John, I have family from Guam from my step dads side & this dish reminded me of this fabulous dish I had at one of their family parties which were all about food. It was very rare cubed deer meat sitting in what I noticed soy, garlic, red/green oinon, lime, these Tic Tac sized red chillies, sesame seeds. It was so good. Would love if you could find a deer tar tar recipe.

    First at all, English is not my first language, it's the second out of 5 but… This is Very confusing..
    I've saw your statement in another video: "do not used frozen tuna"
    "this recipe will not work with frozen tuna"
    "You need fresh tuna"
    The funny thing is that it was a very, very similar recipe.
    A noticeable dichotomy.
    I totally and completely remember that, since I'm a Tuna lover and sometimes I've used from frozen. I'm very curious about what made you changed your mind.

    I would put that into some rice spring roll wrappers and serve it with peanut sauce! Of course, I will put almost anything into spring roll wrappers and dip it in peanut sauce! I think I have a problem with peanut sauce…. Is it wrong to dip sesame crackers into peanut sauce? That reminds me, I need to whip up some more peanut sauce!
