I use those bagged breakfast potatoes they sell at the grocery store and they are already ready to go. As long as they aren’t frozen I just take a cup and throw them in my mix with whatever else and saves so much time of cooking potatoes

We can't get zucchini over here. Can I use courgette instead?

Mamma Mia…that's ALOT of ingredients! My Pavia, Lombardia-version is far simpler. Ahhh…America, the land of plenty. Honestly, try it with half the ingredients. Add some Chianti to the egg mix, too. Remember…its a peasant's lunch, & there's work to still be done after!. 🙂 Sempre Avanti!

I just made this…basically. I had some different veggies available. Also, I added Korean gochujang to it. YUM!

Aww thank you Chef John! Love the reference to Moms giving birth as I am a Mom and while it is hard work I love my baby! (he's 45 and probably won't be cooking this for me but you never know–I posted it on fb to tease him with the idea and we will laugh about it)…. what a wonderful versatile and easy dish! I love your demos and the versatility of this recipe! Thank you so much! I posted this in my WW group on fb too!
