I use those bagged breakfast potatoes they sell at the grocery store and they are already ready to go. As long as they aren’t frozen I just take a cup and throw them in my mix with whatever else and saves so much time of cooking potatoes

Mamma Mia…that's ALOT of ingredients! My Pavia, Lombardia-version is far simpler. Ahhh…America, the land of plenty. Honestly, try it with half the ingredients. Add some Chianti to the egg mix, too. Remember…its a peasant's lunch, & there's work to still be done after!. 🙂 Sempre Avanti!

Aww thank you Chef John! Love the reference to Moms giving birth as I am a Mom and while it is hard work I love my baby! (he's 45 and probably won't be cooking this for me but you never know–I posted it on fb to tease him with the idea and we will laugh about it)…. what a wonderful versatile and easy dish! i cant put a skillet into my convection/air fryer oven-what can i do-flip it ???
