If you are from the Caribbean, you pretty much eat Plantains, every week. They look like Bananas but they don't taste anything like them.

So simple, so good! Just back this week from a sailing vac in the BVIs, so I've been trying a number of Caribbean sides since I've been home. Did baked plantains earlier this week, had one leftover that I was letting ripen more (and yes, they DO look like bananas gone bad!). Maybe it's a mind trick or something, but I used coconut oil – the solid stuff that melts – and I believe it enhanced the flavor of these chips. They made a perfect side to an omelette this morning.
On another note – I bought some canned "pigeon peas" ("gandules verdes" as Goya labels them) to try in a rice mix. Also encountered that in the islands, rather than black beans.
i realize this is a super old video, but putting a small slice of queso fresco on them and sticking it under the broiler for a minute to finish is fantastic.

I never would have tried plantains if I hadn't seen this video. Forgot the salt so just fried up slices in vegetable oil and it was still fantastic. As someone who's really more of a beginner cook, thank you for showing off a simple, delicious, and unique (at least in my corner of the world) dish.

We fry our plantains in unsalted butter. Everything's better with butter!
And just remember… you are the D.C. Fontana of your banana… or would that be… you are the Major Payne of your plantain. Either way, feel free to fruit your own horn when you decide to serve these.

They are never like a banana. False info. Plantains when really dark are mild and have a sweet tendency but absolutely nothing like a banana.
I grew up with plantains! They’re delicious! We have many Chavez supermarkets in the Bay Area. They have a great selection of different plantains. 😀

I know this video is extra extra viejo, as they say, but in case Chef John is checking the comments: the tostones video on your blog no longer loads. Do fried green plantains again, please por favor please! All the recipes I've seen look super-complicated, with two separate fryings with an ice water bath in between (for the plantains, not the chef). Complicated recipes are deal killers for me.
