I often make my sweet potatoes in the slow cooker. Wrap them in foil and leave them for a couple of hours (on high) or overnight (on low).
too much sugar…. sweet potatoes are sweet enough …….. if you need to sweetin you can decide after it's done by just adding jelly or maple syrup directly on top of muffins……

My wife made these today, and they are great. Very moist and not too sweet. She used all butter, and that worked out just fine.

I filled out my muffin tray like you did and the batter yielded me 23 muffins 😋yum yum, I love recipes that have a big yield for one batch because that means I can share and still have lots left for myself!

OK so this recipe is delicious, p as we’ve come to expect from every CJ recipe. I do a thing with mine that doesn’t change the recipe, but takes the flavor profile to the next level. What I do is this: when the muffins are fully cool, take as many muffins out of the batch as you intend to eat right away. Put those in a tin or on a sheet pan with no paper and put them in the oven at 425 for about 5 minutes. You will get a carmelized, chewy in a good way, amazingly complex set of additional flavors. Because after all, you are the Juliard faction of your Maillard reaction.

These were so good!! I also gave some to my grandma and grandpa and they asked for the recipe, it took me a few minutes but I translated everything to Dutch and in grams😂 I also toasted the chopped pecans for an extra amazing flavor. Definitely a keeper!! I did reduce the sugar a bit though😅 I used 75 grams of brown sugar instead of 110 or something and about 5 tablespoons less of the normal sugar. I think if I added the full quantities it would be a bit to sweet
