    Made this tonight. Definitely see why Captain Cayenne omitted said spice from this one. Definitely needed no further spice boost than it has as is. Hey John. I gently spread out the topping like you did, but most of mine sunk down and cooked inside the pan, rather than on top. Still kicked butt, and the flavoring was most excellent. Was my base too liquidy upon assembly? Honestly, it looked just like yours at every step, but the "tamale" just sank down in during the cooking.

    Made this tonight, and it was FABULOUS! It's getting to the point where all I have to say is, 'It's a Chef John recipe.' and the fam is more than down. I did add a can of drained black beans because I was a bit light on the turkey, and some sliced olives because I cannot leave anything well enough alone. I think it's a condition….

    Oh, and I also found that there was no need for chicken stock if you just use a bigger can of enchilada sauce. =3

    Not bad but I think that you would have a much better flavor profile if you made your sauce from hydrated guajillo chiles, onions and garlic

    Chef John, can semolina be used instead of corn meal? In Aus cornmeal and semolina are kinda the same thing? But semolina definitely doesn't dissolve into a batter without cooking it.

    Great dish, had to use chicken, TG turkey was devoured by my 20-year-old grandkids and their friends. Had a roasted chicken left over, worked well. BUT peppers suggested were way too hot for my wife, so I had to find some sweeter pepper to use but still worked out great.

    Your northern friends in Canada cannot get Enchilada sauce in any regular grocery store…in fact, I have never seen it north of the 49th parallel (biggest part of our border) So please do a recipie 🙂

    Tired this. Interesting approach!
    Results: once was enough. We took the rare step of throwing away uneaten leftovers, maybe because ours was just ordinary. It's not that it was bad, but it was not delicious. I followed the recipe pretty much exactly as presented.

    I made this the other day with canned chicken that I have a surplus of – well I keep a bunch on had for emergencies so need to rotate the stuff out after a year. Anyway I pureed the chipotles in adobe sauce and only used 1 poblano pepper and it was too spicy for everyone in my family except me so next time I will tone it down I was surprised at how much corn bread there was in the mix and next time I will actually make more of the meat filling to get a better ratio of bread to seasoned meat. Thanks for the recipe!

    Trying this with leftover Easter turkey 🐣. Will see if I’ve made one substitution too many. I thought I had many more of the ingredients than I did, but in reality had similar things like green enchilada sauce, rather than red, etc. I hope it’s good because now rather than a medium mound of turkey, I am going to have a big mound of some kind of pie 🥧 🌶 🦃
