Dear Chef John, I've watched too many of your videos in the past hour to just sit here in silence. . . .. . YOU'RE AWESOME! AND hilarious! AND professional! AND everything I've seen you make so far looks truly delicious. I especially love your constant emphasis on technique rather than memorization of grams or ounces.
So THANK YOU so very much for everything you do for us commoners. Much love.

I have a soapstone mortar and pestle, but I think its too small to make the amounts of this I'd want to. TIME TO BUY A BIG ONE! 😀

  • Ser Rich on April 15, 2016

Lol. You are silly, fun vid though. Gonna have to make me some of that. 🙂

  • curiousSOUL22 on April 21, 2016

A stone or marble pestle wouldn't have worked 'just as well', it would have worked better, I think! 😛

  • curiousSOUL22 on April 21, 2016

He's right about glass mortar and pestles, ya know. Like, why?
I feel the same way about glass chopping boards. -_- WHYYY …They're so horrible.

If I wanted to save time smashing and don't mind cleaning a food processor, could I theoretically smash to get the flavors and then process for texture? Or will the friction from the blades wreck it?

I made Pine nut and basil pesto and put over pasta. Very good. I haven't made it in a while. I haven't been able to fine the fresh ingredients.

  • Josh Hoffler on July 27, 2018

At about 1:19 is that mortar and pestle special? Does the fact that it's made of wood vs another material (stone or glass) matter?

  • iarba on August 4, 2018

For some reason my Italian Parsley has begun overproducing like crazy during the quarantine, and since I have a couple softball sized Meyer lemons left on the tree, I’m going to make this later today!
