    You say it looks like a noodle salad, and that it tastes like a noodle salad… So why not simply use real noodles to make a noodle salad? Why replace perfectly fine noodles with this weird stuff from a low budget horror movie, that's ten times more expensive than noodles?

    No, Chef John… honey isn't vegan. But it is vegetarian.

    Bees are living creatures so vegans won't eat honey: in the process of collecting bees' honey, some of them are killed incidentally. The more commercial the company, the more bees that die during transport to farms for pollination, and when collecting honey. And to collect bee pollen, the beekeeper makes the entrance to their hive so small that the bees will knock off the pollen collected in their "pollen basket" on their hind legs, and it drops into a collecting tray… but their legs get ripped off as they squeeze through the tiny hole, too. Sorry. Next time, how about a different syrup like agave, Rice Dream brown rice syrup, or maple? You know there are others, besides those. I'd choose the brown rice syrup.

    A very interesting use! Yuba (湯葉) has a special place in my heart. In Japan, it comes in two states, dry and not dry. The former is more popular, in many shapes (rolled, sheet, shredded pieces), and is used in the clear soups or hot pot, and so on. There was a lady in my neighborhood who worked in a tofu factory and she used to take home some bags of broken pieces of dry Yuba products to give us some away. A fond memory.
